Yeah, I did it. And I don't regret it.
This was my first-ever butternut squash soup and is was quite tasty, a little spicy, and very creamy. Can a soup be too creamy? It almost crossed the line. I'll have to cut back on the heavy cream a little next time. I didn't use a recipe, just made it up as I went along. Roasted the squash, some carrots, and onions. Added veg stock, cream, spices and such. Splattered it all over the stove with the immersion blender. Good times. The whole scalloped-sour cream bit I saw in a Martha mag this season. I know, it is a little fancy, but why not? It's the holidays.
mmm. Gotta have sesame bread sticks.
Mike and Max aren't keen on squash soup (lame,) so my sister, her friend, and I had to enjoy it by ourselves. It's always fun explaining to visitors that, instead of sitting down and eating right away, we have to get our cameras and take pictures of the food first. Especially when it's fancy like this. That's just what we do, my sister and I. Because we're cool like that.

In my "cream soups" I omit the cream and puree everything! I make soup every week for my lunch and real creams get funky in the microwave.
The BEST cookbook (I think) for soup in "Moosewood Restaurant Daily Special". You should check it out.
I had two friends over a morning I baked an apple pie (your pie crust idea)...I heard them in the other room..."is she in there taking pictures!?" hahaha

Look at you with your fancy scallops! I love butternut squash, though I've never had it in soup form. Nor have I ever had scalloped-sour cream. I must try doing both!
Lucky for me, my boyfriend totally gets it. If a dish is going rather well, he'll yell, "get the camera!"

BTW...kudos for doing it yourself and not opening up a can. I did this ONCE but that was a long time ago.
